Last Night's Dinner was a Flop

All the food was really good yesterday (especially the Macademia Nut Blondie...yum!...I'll share the recipe soon) except for dinner.

I had such high hopes for dinner because I LOVE Mexican, specifically Tex-Mex, food. After all, I am originally from Colorado. The recipe called for grilled chicken that was marinated in lime juice, olive oil, cumin and salt. It was accompanied by avocado, tomatoes and onions that had been chilled in the same marinade ingredients. I then made a whole wheat & 4-cheese quesadilla. It wasn't horrible, but it just was blah. Unfortunately, I made enough of it for two meals, so we'll have to eat it again, but I definitely won't be making the recipe again.

I did get my workout in last night as well and a good night sleep (until I dreamt that the house was on fire and nobody believed me) so hopefully today will be another success!

  1. What if you put the grilled chicken in the cheese quesadilla? Maybe everything would be better that way. :)
And just so you know, I have NEVER been a size 4. I went straight from Girls 16 to a size 6 in middle school and never looked back.
    You go, girl!
